Four Flamingos is Richard Blais's tropical, resort elegant kitchen at the Hyatt Regency Grand Cypress, built around an open kitchen, a raw bar and a live lobster tank. The bone-in swordfish prime rib and the Tuna Tostada with passion fruit yolk chase Florida flavors, and the Key Lime in the Coconut cocktail and dulce de leche creme brulee keep the playful streak going.
