Omelet Bar is a bright, relaxed cafe on Strategy Blvd near UCF where the omelet itself is the main event, built to order from a fresh bar of fillings. The Bostonian stuffs lobster inside and finishes with lobster bisque, the carne frittata pairs smoked brisket with sausage gravy, and a chicken and waffle flight makes the table happy. Beignets, biscuits and gravy and stuffed French toast round things out, though the wait can stretch when the room fills up.
